Tuna Salad Sandwich with a side of Sriracha kettle chips

Ingredients

Scale

Sandwich:

  • 2 cans of tuna packed in olive oil
  • 1 stalk of green onion chopped fine
  • 1/2 stalk celery chopped fine
  • 1 tablespoon mayo
  • 1/2 tablespoon mustard
  • salt and pepper to taste
  • 2 teaspoons butter
  • 4 slices of a rustic crusty bread

Tomatoes:

  • 1 plum tomato diced
  • 1/2 clove garlic minced fine
  • 1/2 tablespoon of extra virgin cold pressed olive oil
  • 1 teaspoon of fresh basil chopped
  • salt and pepper to taste

Garnish:

  • 2 pickles
  • 2 handfuls of kettle sriracha chips (or chips of your choice)

Instructions

  1. Open and drain tuna well.
  2. Break up tuna in a bowl.
  3. Add chopped green onion and celery and mix.
  4. Spoon in mayo and mustard and blend.
  5. Season with a bit of salt and pepper and set aside.
  6. Take bread slices and put into toaster and toast to a nice golden brown.
  7. Butter each slice of bread.
  8. Take the tuna mixture and spread throughout the face of the bread.
  9. In a bowl toss in the diced tomatoes, basil, garlic, olive oil, salt and pepper
  10. Sprinkle on top of the tuna mixture.
  11. To with slice of toasted bread.
  12. Cut diagonally.

Garnish:

  1. Place a pickle in a basket with the tuna sandwich.
  2. Toss in a handful of chips of your choice.
  3. Ready to serve
  4. Enjoy!

Notes

If you don't like the bad breath that garlic can cause, take out the center root of the garlic by cutting the clove in half and you will see this center root sometimes a slight green color, remove this.

If you want keep the oil of the tuna for other dishes as suggested in the post write up.
