I have to say, sometimes I really like to go with ideas that pop into my head. It is when my creative juices really get going and food is such a lovely way to express that. Well, today I have a real comforting and delectable dish for you. One that combines two great cultures into a dish that is harmonious and luxurious.
Come, let's get into the kitchen and whip up some fusion cuisine! More so, this Thai inspired perogies with potatoes in curry sauce!
What you will need from your kitchen to make this Thai inspired perogies with potatoes in curry sauce:
- pot for boiling the perogies
- deep sauté pan
- wooden spoon
- cutting board
- good chopping knife
Here is the list of ingredients needed to make this dish:
- potato cheddar perogies
- yellow potatoes
- red peppers
- green onion
- ginger
- small yellow onion
- fresh basil
- bay leaf
- red curry paste
- coconut cream
Prep always make cooking easier!
I always like to be organized and ready before tackling the cooking aspect. With that being said, we are going to get right to it and this is how it's done:
- Firstly, we need to peel, wash and cut up the potatoes. I like mine in chunks.
- Secondly, slice the peppers in half, clean out the core and seeds, then cut into nice diced bite size pieces.
- Thirdly, sliver up some ginger, and also slice up the green onion into thin rounds.
- Also, slice up the yellow onion into nice thin strands.
- Lastly, get your red curry paste and coconut cream into dishes ready to go.
- Pre-boil your potatoes for about 15 minutes in a pot of salted boiling water. Drain and set aside.
Multitasking is the way to go
The key to making cooking easier is to multitask, which means as one thing is cooking, another task can be done. In the case of this recipe, this is how we make it quick:
- Bring a pot of salted water to boil. Lay in the perogies and cook for the recommended time on the package.
- While the perogies are cooking, we can get the pan all seasoned up by adding some vegetable oil, and sesame oil. Bring that to a medium heat.
- Toss in onions and ginger, and let that sauté for a few minutes until softened, the add in your diced red peppers.
- Time to add in the bay leaves and red curry paste,. Give it all a good stir.
- Once the perogies are cooked, throw them into the pan with some of the water you boiled the perogies in. Add in the potatoes. Another good stir and let that simmer, lowering the heat to a low to medium setting. Remember to stir frequently as we don't want to have the perogies or potatoes stick to the pan. Once the potatoes are fork tender, turn off heat.
Finishing touches and a little bit of love!
We are almost done, there are only a couple of steps and a little bit of time before we can feast on the lovely dish. In the end, when I am cooking and creating those levels of flavor, there is one thing I always remember and that is to put a little love in the food! Here are the final steps:
- Pour in the coconut cream.
- Take the fresh washed basil leaves and tear them up and into the pan they go.
- Let that simmer covered on low for a few minutes, then turn off heat, uncover, and add the sliced green onion. Lastly, a good stir, and this Thai inspired perogies with potatoes in curry sauce is ready to serve!

I always say this, I wish there was aroma vision then you could smell this dish and how heavenly that experience is. I can sense the red curry and how lovely it dances with the coconut cream. The basil waltzes in with its joyful splendor and those red peppers put such a sweetness in the air. I don't know about you but I get pretty excited about the aroma of cooked potatoes and that anticipation of how soft and silky they will be.

Ingredients
- 12 frozen good quality potato/cheddar perogies
- 4 small yellow potatoes
- 2 Tbsp evo oil
- 1 tsp sesame oil
- 1 red pepper
- 1 small yellow onion
- 2 green onions
- 1 Tbsp slivered ginger
- 2 tsp red curry paste
- 2 bay leaves
- 1 small can coconut cream or milk
- 3 fresh basil leaves
- salt and pepper
Instructions
Prep:

Perogies:
- Get a large pot of salted water on boil. Toss in the frozen perogies, and cook for the recommended time on the package. I always wait for them to rise to the surface and see a foam on the edges of the water. That tells me they are done.
- While perogies are cooking, heat up vegetable and sesame oil on a medium heat. Toss in yellow onion an ginger and cook for 2 minutes.
- Next, add in red peppers and let that cook for another 2 minutes. Season with salt and pepper.
- Time to add in the bay leaves and curry paste and ¼ cup of the perogy water. Give it all a good stir getting that curry paste evenly distributed in the pan.
- Drain and throw in the potatoes and perogies and stir again coating everything nicely with the sauce.
Finishing touches:
- Pour in the coconut cream and throw in the fresh basil leaves. Add in half the green onion. Stir, cover, and let that simmer on low heat until potatoes are for tender.
- Turn off heat, garnish with the leftover green onion, and serve!

Notes
You can use your favorite perogies with different fillings.
If you want it more spicy you can add more red curry paste.
