When we talk about Italian cuisine, it is definitely divided into Regions!

Today we are taking you up north in the mountainous area of Valtellina for a traditional dish that is the epitomy of comfort food for this region!
.
This dish is called Pizzoccheri, and it is made up of homemade buckwheat noodles, Savoy cabbage, potatoes, and plenty of cheese and brown butter sauce!😋
.
The pasta, cabbage and potatoes are cooked together then united with the cheese, and butter. Talk about scrumptious. If you want to make it a bit more crispy and gooey, get it into a hot oven for a few minutes! The flavor and texture will win your heart!❤

By this time, like every past year, I would be spending my winter in Rome, back to work.
Not the case for the winter of 2021, because I am allowed to work from Canada. It feels a little weird to connect with my coworkers in my early morning when there is already afternoon, but I am enjoying it, I like our virtual meetings, and being able to contribute to the work at hand.
And what is great, due to the time change in my favor, I still have the afternoon at my disposal, to work on the blog, and bake 👩‍🍳🤩.
Yesterday afternoon, in fact, I baked this Lemon Ricotta Cake.
Whatever we cook or bake is always dictated by what we need to use up, and this time, it was ricotta.
I followed an Italian recipe from @_carodiario that had very basic ingredients: lemon juice and zest, eggs, sugar, milk, vegetable oil, vanilla, ricotta, flour, potato starch, baking powder.
I decided to bake it in a bundt pan and this is the result. Pretty, isn't it?😊

I love this kind of simple cakes, they are right up my alley, and although we still have some of those decadent chocolate cookies left, I feel drawn to this cake more. I like to have a slice at breakfast, dunking it in my cappuccino, or as an afternoon merenda, or after dinner with tea or coffee😋.
The flavor is similar to my yogurt cake, simple yet delicious, with just a hint of lemon flavor. I even reduced the amount of sugar, so it is perfectly not-too-sweet just how I like it.

What can you do when you have some cooked sweet potato, black beans, rice, and a few fresh corn tortillas lingering about?

Make it a Mexican feast day and create Black bean, Sweet Potato, rice, Enchiladas!
.
And guess what? That is exactly what I did, and what a delicious lunch it was!.
.
Here's the run down of the recipe:
.
I first sautéed some onion/garlic in a pan, then added the sweet potato, black bean, and rice. Added turmeric, cumin, coriander, and some vegetable stock. Plus for added freshness and vibrancy, mango salsa, cherry tomatoes, and chopped avocado. That's the filling!👍😛❤
.
Next I heated up the corn tortillas in a pan then stuffed and rolled them with some cheddar and filling. Into a baking dish they went.
.
The topper an Enchiladas sauce which has:
Veg broth, mango salsa, hot sauce, Sriracha, chili flakes and a rue to thicken things up.
.
To seal the deal grated cheddar and a nice bake in a hot oven to get all acquainted and cheesy gooey!😛😍😋
.
The end result truly outstanding lunch full of flavor and texture. I served the Enchiladas with extra sauce and a quacamole salsa. Talk about spice! ARRIBA!🌶🌶

Flourless fudge cookies for #stressbaking Monday...

The story that led me to them is about synchronism. And the preamble is that I am always up for baking👩‍🍳🥰.
Anyway, that's how it went:

1) I opened the email from @delish and there was the alluring photo of some very decadent cookies

2) I read the email and among the ingredients, there was one that I had and desperately wanted to use up: egg whites🥚

3) It seemed I also had the rest of the ingredients: icing sugar, cocoa, salt, vanilla extract, and chocolate chips

So, even though these cookies are not my style, I set myself in motion, and here they are.

In my defense, I can say that I halved the recipe so I only made 10, and probably the cookie monster in our house will take care of most of them 😄 . Good thing, he only strikes past midnight😉.

After tasting one (see the bite), I have to say these are super fudgy choco delicious with crispy edges.
They say these cookies come with less guilt than regular cookies because they are flourless and have no butter or oil, however, let's be honest, the amount of icing sugar compensates for that 😄.

In the end, I know my better half would say: live a little! 🤩👍

This month we landed in Vietnam and after researching recipes, we fell in love with this soup!❤

The flavors of the velvety Kabocha and succulent pork danced nicely with a wonderful light vegetable broth, highlighted with fresh basil, five spice, fish sauce, lemongrass, and green onion!😋😋👍

Too bad it's gone 😉 .

Usually, when we make baked goods, we try to deliver some to neighbors, family, and friends. Not this one. This one never made it past our kitchen😁.

Maybe it's because it is not sweet and more like bread which is always a bonus to us, also because it doubles as breakfast and/or dessert. Moreover, kept in a paper bread bag, it lasts 3-4 days without losing its great texture or flavor👌.

If you love to bake, hope you feel inspired to try it. I have made it countless times during the years, with Nutella or any other chocolate hazelnut spread 😋.

Yesterday we had the pleasure to enjoy the fruits of our labor and we sat down to a wonderful lunch.
We feasted on these light, delicate and tender beetroot ricotta gnocchi done in a brown butter basil and Parmigiano sauce.
