One night we were talking about the many delicious Norwegian cookies with our friends Lana and David.
The day after, we had an invitation to attend a Scandinavian Christmas market where we stumbled upon the cute tins to make Sandbakkelse and two gorgeous blue plates. You bet, both the tins and the plates came home with us.
These cookies were meant to be!
Sandbakkelse (or sandkaker), sand tarts, are traditional almond and vanilla-flavored Norwegian Christmas sugar cookies that are baked in specific fluted tins and are served as a shell tipped upside down. The purists serve them plain like a cookie, but they can be filled with fresh fruit, whipped cream, or lemon curd.
We tried them with raspberry jam, delicious! We tried them with lemon curd, delicious! Plain, accompanied by tea or coffee, delicious! Choose your way!

Parliamo di Serendipity.
Una sera di qualche settimana fa stavamo parlando dei tanti deliziosi biscotti norvegesi con i nostri amici Lana e David. Il giorno dopo, ad un mercatino di Natale scandinavo, ci siamo imbattuti nei graziosi stampini per fare i Sandbakkelse e due splendidi piatti blu che sono tornati a casa con noi. Questi biscottini s'erano proprio da fare!
Sandbakkelse, Norwegian Christmas Cookies sono ora sul blog.
I sandbakkelse (o sandkaker), sono tradizionali biscotti Norvegesi fatti di burro, uova, zucchero e farina e aromatizzati con estratti di mandorla e vaniglia che vengono cotti in appositi stampini e sono serviti come un guscio capovolto. I puristi li servono semplicemente come un biscotto, ma possono essere riempiti con frutta fresca, panna montata o lemon curd. A voi la scelta!
