Making desserts with seasonal fruit is something I love😍. .
Today it's time to use some pears🍐 that we bought in huge quantity. 🤓Don't you agree that pears are so underrated in fruit-based desserts⁉ However, they totally add an amazing flavor and texture💯. .
I am PEARing them😉 with cinnamon, lemon, hazelnuts, on a crust that features olive oil and an unrefined flour.
It's fragrant, wholesome, and delicious. 📌

I can't wait till the weekend for pizza so I made one midweek. Pizza a taglio style (pizza by the slice).

In Rome there are these amazing pizzerias and you will see a sign "pizza a taglio". Beautiful rectangular pizza of all flavors ready for the picking!

Well I am not in Rome but I can make pizza, so this one's a hot Capocollo with arugula, sun dried tomatoes, and buffalo mozzarella on a homemade crust with tomato sauce. So yummy.

Best part it was free, well not exactly, I had to buy ingredients, however so minimal it seems free!
.
Make any night pizza night, why, because you can!😁 and make it rectangular!

Our Pizza🍕 dough recipe:
-500 g "00" flour
-5g fresh yeast or 2g dried yeast
-300ml lukewarm water
-35g evo oil
10g salt

Today I am really excited because I was totally inspired by Jamie Oliver on his Comfort food show.

He made a Crust-less Fish Pie that looked incredibly delicious. He has a way of getting you so hungry and passionate about cooking!
.
Well I took that inspiration and welcome you to our kitchen to make this Crustless Curried Seafood Pie.
.
What can I say, Haddock, Halibut, salmon, and sole rosettes and some shrimp nestled beautifully in a rich yellow curry coconut sauce with wilted greens, topped with a piped potato and parsnip buttery puree! Oh, a little cilantro for good measure!
Are you hungry yet! Well let's get to making this spectacular dish. You won't miss that crust because this topping is over the top flavor texture town goodness!

Talking about Italian traditions, another one is making a crostata for a Sunday lunch dessert or to bring when invited over.😍
In the few months that I am back in Rome, I try to see as many friends as I can. We go out for lunch, to a movie or live theater, we take a 'passeggiata' (stroll downtown) and have gelato, we invite each other over for dinner.
Yesterday I had both a lunch out with co-workers and an invitation for dinner at some friends where
I decided to bring my go-to dessert: olive oil crostata with quince jam. This time, I used half spelt flour and made a more rustic topping.
.
Since I posted it on the blog, I've made it already 3 times and each time has been a huge success👏.
.
Last night, after a wonderful meal prepared by the host, we "polished" the crostata among praises about the pastry and my dad's homemade quince jam and I was handed over the empty baking pan😄.
✔Things that make me happy: sharing food with good friends😍.
Only one thing missing, my husband Loreto💑, but we're already planning to do it again in the summer when we will be both here.

Whether fettuccine, spaghetti, gnocchi, lasagna, or ravioli, it just wouldn’t be Sunday without a traditional homemade pasta dish. .
Why not make it Italian Sunday lunch -or dinner- and feature these Ricotta and Spinach Ravioli in Tomato Sauce?
Tender, beautiful, homemade noodles, stuffed with a creamy mixture of ricotta, spinach and nutmeg, served with a simple basil tomato sauce and topped with grated Parmigiano. .

Naan crust meets San Marzano crushed tomatoes, hashbrowns, crispy thick bacon, red peppers and green onion for color and a beautiful organic free range egg to star the show!! Oh I almost forgot the cheese, buffalo mozzarella!😄 .
This was the most delicious breakfast I have ever had!😍👌!

I don't have my in house baker Nicoletta as she is away right now in beautiful Rome, so I am putting on the baking mits and making a dessert for today.

I made these Blueberry Raspberry Mini Tarts with Italian Pastry Cream.
.
They are not perfect but they sure make up for it in flavor. Blueberries macerated in cane sugar and limoncello. Italian lemon custard and on top a beautiful raspberry and mint leaf.

Now some tea to soothe my throat and a mini tart for my soul! Mmmmmmmmmmm.........
