It is strange that knowing how much I like sweets, there are so many sweet treats that I do not like and therefore do not eat, mostly because I find them overly sugary. Many are the cakes I do not favor, many the cookies I do not touch. Also, for the chocolate spreads or peanut butter/cookie butter that you can often find in my pantry, many are the ones I cannot endure, a teaspoon and you see my face cringe.

 

 

It is not because we work with this brand that I say so, but we really like the Penotti products. I can taste the premium ingredients in their spreads and I appreciate that they have no colors, no preservatives, no artificial flavors and are GMO-free. Also, they come from sustainable sources and are in accordance with international Fairtrade standards.

The cookie butter that I used as a filling in these Spelt Flour Cookie Notti Sandwiches is made with the original Belgian spiced cookies called Speculoos, deliciously thin, very crunchy, caramelized, and slightly browned cookies with flavors of pepper, cinnamon, ginger, cloves, cardamom, and nutmeg.

The Cookie Notti Butter is a great compliment to my lovely spelt flour cookies. Together they make a beautiful treat, definitely healthier than the store-bought options, and also fun to make. It could be a nice activity to do with your kids and you can feel comfortable to stash a couple Spelt Flour Cookie Notti Sandwiches in their lunch bag. You could also try filling the sandwiches with the other Penotti spreads: the Duo Penotti Hazelnut and Caramel, Cookies and Milk, Hazelnut and Vanilla, the Penotti Organic. So many to choose from and all so good. It’s true, Penotti the brand with a choice.

Almost all my baked goods, even if not always vegan and gluten-free, are attentive to using the best ingredients possible: organic flours, free-range organic eggs, unrefined sugars, yogurt and e.v.o. oil/vegetable oil, or applesauce to replace butter. Often I add fresh seasonal fruit, or dried fruit, or organic dark chocolate and chocolate spread.

In these Spelt Flour Cookie Notti Sandwiches, I used half spelt flour and half 00 flour (or all-purpose) in order to get a light and crumbly pastry dough, but I am thinking that next time I can replace the 00 with rice flour (either white or brown), that I did not have at the moment. The olive oil makes a great shortbread texture; I often replace the butter with this golden jewel in my baking (the ratio is 100 g butter to 83 g oil).

I just love these cookies. It is like an art project and the best part, they are edible. Don’t they look pretty? I can’t wait to bite into these.

Description

Spelt Flour Cookie Notti Sandwiches: light and crumbly cookies, with an olive oil pastry dough, and the delicious Cookie Notti filling. A good snack for kids and grown-ups, a great accompaniment to tea or coffee, a nice end to a meal.


Ingredients

  • 200 g spelt flour
  • 200 g all-purpose flour (or 00 flour)
  • 150 g raw cane sugar
  • 83 g e.v.o. oil
  • 2 eggs, organic free range
  • 4 Tbsp milk (any kind)
  • pinch salt
  • 1 tsp cinnamon
  • 18 g baking powder
  • Cookie Notti butter (for the filling)
  • icing sugar (for the tops)

Instructions

  1. Sift the flours through a sieve and onto a pastry board. Add the sugar, a pinch of salt, the oil, the eggs, the milk, the cinnamon and the vanilla yeast.
  2. Work the dough with your hands, mixing the ingredients thoroughly until smooth. The dough will be soft and delicate. Divide the dough into two balls.
  3. Flour the rolling pin and the bottom of the pastry board. Roll out the first dough ball fairly thin. Set the other ball aside (or in the fridge).
  4. Turn on the oven at 350° F (180° C) and prepare at least 2 baking sheets with parchment paper.
  5. Using the bigger square cutter, cut as many squares as possible from the first rolled dough. Place them on a baking sheet about 1 inch apart. Gather leftover dough into a ball and roll out again and cut more squares. Repeat until most of the dough is used.
  6. Bake the bottom cookies in the preheated oven for 15 minutes, or until edges of cookies are slightly golden brown.
  7. While cookies are baking, take the second dough ball, roll it down at the same thinness and begin cutting squares. Then with the smaller square cutter, remove centers from the cut squares, to make the tops of the cookies, the “frames”. Bake “frames” for about 10 minutes, checking on them so they do not brown too much (the tops take less time to bake).
  8. Remove cookie tops from oven and let them cool on baking sheet for 5 minutes and then transfer to wire rack to finish cooling completely. Dust the tops with icing sugar.
  9. Bake all the cookies in batches of the same size: bottoms, tops (frames), smaller squares (inside frames) for the required time until you utilize all the dough.

Assembling the Cookie Notti Sandwiches:

  1. Spread about a teaspoon of Cookie Notti butter to the bottom of a cookie, place the cut cookie top on to bottom and gently squeeze into a sandwich. Repeat with rest of the cookies.

Notes

  • I bake one baking sheet at a time, so the cooking time in the recipe is just for 1 batch of cookies. The dough makes quite a few cookies, so you will be using the oven for quite some time unless your oven can bake 2 or more baking sheets at the same time.
  • The cookie sandwiches stay crumbly for 2-3 days when stored in an airtight cookie box, tin, or plastic.
  • I left some cookies plain and, together with the smaller squares, they are great for breakfast or as a crunchy snack.

E’ strano, sapendo quanto mi piacciono i dolci, che in realtà ce ne siano tanti che proprio non riesco a mangiare perchè li trovo troppo zuccherosi. Tante sono le torte, tanti i biscotti che non mi piacciono e che non tocco nemmeno. Anche tra le cioccolate spalmabili, e i vari burri di arachide che si trovano spesso nella mia dispensa, ce ne sono tanti che non sopporto: un cucchiaino e dovete vedere la faccia che faccio quando sento tutto quello zucchero raffinato.

Non è perchè lavoriamo con questa marca che lo dico, ma i prodotti Penotti ci piacciono davvero tanto. Sento che utulizzano ingredienti di prima scelta, tutti naturali, senza additivi, né aromi artificiali o coloranti.

Il burro spalmabile Cookie Notti, che avevamo già usato sulla base di una pizza dessert, e che ora ho usato come ripieno di questi biscotti di farro, è fatto con i deliziosi bicotti Belgi speziati Speculoos.

Quasi tutti i dolcetti che sforno, anche quando non sono vegani o senza glutine, sono fatti con i migliori ingredienti possibili: farine biologiche, uova biologiche da allevamento a terra (ci tengo molto!), zuccheri non raffinati, yogurt e olio d’oliva (o un buon olio di semi) a rimpiazzare il burro. Spesso aggiungo frutta fresca, frutta secca, cioccolata fondente, o cioccolata spalmabile biologica.

Il burro Cookie Notti è un ottimo complimeto a questi biscotti di farro. Insieme, creano un dolcetto sfizioso e certamente più salutare di quelli acquistati. Sono anche divertenti da fare, e sarebbe un’attività carina da fare con i bambini, e voi vi sentirete serene a metterne un paio nella cartella dei vostri figli. Potete anche sbizzarrirvi con le altre cioccolate spalmabili della Penotti, ce ne sono tante tra cui scegliere, e tutte buonissime.

Per questi frollini ho usato metà farina di farro e metà 00 per ottenere una buona pastafrolla, ma penso che la prossima volta sostituirò la 00 con la farina di riso, che non avevo al momento. L’olio di oliva si comporta come il burro in questi biscotti (la ratio è 100 g di burro per 83 grammi di olio) e la frolla è davvero leggera e friabile. La cannella è un ottimo partner di questi biscotti di biscotti e ben si sposa con il burro di biscotti Speculoos, già di per sé speziati.

Description

Leggeri e friabili, questi frollini di Farina di farro farciti con burro di Speculoos, hanno una pasta frolla all’olio d’oliva, e un gustoso ripieno. Ottima merenda per grandi e piccoli, come accompagnamento a tè e caffè, e come fine pasto.


Ingredients

  • 200 g farina di farro
  • 200 g farina 00
  • 150 g zucchero di canna
  • 83 g olio e.v.o.
  • 2 uova
  • 4 cucchiai di latte
  • un pizzico di sale
  • 1 cucchiaino cannella
  • Cookie Notti crema spalmabile
  • una bustina di lievito vanigliato

Instructions

  1. Passate le farine al setaccio e disponetele a fontana sulla spianatoia.
  2. Unite lo zucchero, un pizzico di sale, l’olio, le uova, il latte, la cannella e il lievito vanigliato.
  3. Lavorate l’impasto con cura, amalgamendo gli ingredienti. L’impasto risulterà morbido e delicato.
  4. Infarinate il mattarello e il fondo della spianatoia. Stendete la pasta piuttosto sottile e tagliatela con le formine desiderate. Le mie erano quadrate, una più grande e una più piccola.
  5. Accendete il forno a 180° C e preparate almeno 2 teglie con la carta forno.
  6. Disponete i biscotti che faranno da base sulla placca del forno.
  7. Fateli cuocere per circa 15 minuti, o finchè leggermente dorati.
  8. Tirate fuori dal forno e fateli raffreddare su di una gratella.
  9. Infornate poi le “cornici”, che andranno cotte per circa 10 minuti. Tiratele fuori dal forno, fatele raffreddare su una gratella e cospargete di zucchero a velo.
  10. Spalmate il burro di biscotti Speculoos sui biscotti che faranno da base (il quadrato più grande), poi coprite on la “cornice” zuccherata.
  11. Infornate i quadrati più piccoli (l’interno delle cornici) e cuocete per circa 10 minuti o finchè leggermente dorati.
