Quick and tasty dinner idea
In Italy we are always keeping things simple. However, we never sacrifice quality or incredible flavor. Think of our Skillet orange chicken thighs (Pollo all'arancia); Quick 30-minute Spaghetti with Spinach and Gorgonzola; and "Rags" of Beef with Arugula (Straccetti con Rughetta).
This Quick and tasty Veal Scaloppine al limone, has few ingredients and takes less than 20 minutes to prepare. Pretty enticing right? Perfect for a weeknight supper, but also elegant enough for a weekend dinner.
Ingredients for our Quick and tasty Veal Scaloppine al limone!
Here is what you will need for this recipe:
- Thinly sliced veal fillet. See below for meat substitutions.
- Type "00" flour. Replace with rice flour, or cornstarch, to make it glutenfree
- Salt and pepper
- Lemon
- White wine
- Butter
How to make Scaloppine al limone
Here is where I love to be. In the kitchen cooking. Come join me, let's have some really delicious simple fun. Here is how its done:
- Firstly we want to tenderize the veal fillet. Place them in some plastic wrap and using the meat cleaver, pound the fillets working from the center out. Turn over and do the same to the other side. Do this to all the fillets and place onto a plate.
- In a shallow bowl pour in flour. Season with salt and pepper and stir with a whisk to blend the seasoning evenly through the flour.
- Season both sides of the scaloppine with salt and pepper also.
- Take a fillet and place it into the flour. Coat well with the flour on both side, shake off any excess flour and placed dredged veal scaloppine onto another clean dish.
Time to cook up the Quick and tasty Veal Scaloppine al limone!
- In a large sauté pan drizzle in olive oil. Bring to a medium to high heat and start to place the dredged veal scaloppine in.
- Saute for 1 minute then turn over and saute for another minute. Take fillets out of the pan and place on a clean dish.
- Continue doing this until all the fillets are done.
Pan bits make for a good sauce
In the pan you see all those caramelized bits, we don't want that to go to waste. It makes for a really delicious sauce. This is what you want to do.
- Keep heat on low to medium, pour in the white wine, and with a wooden spoon loosen all the bits on the bottom of the pan.
- Once the alcohol is cooked out, add the butter, then cut a few slices of lemon and place them in the pan.
- Now we want to add the veal scaloppine back in. A nice fresh squeeze of lemon, then turn off heat.
Aroma!
The aroma of this Quick and tasty Veal Scaloppine al limone has my mouth watering. The butter, wine, and that sweetness of the juices in the pan, meld so well with the lemon. Just love it. Can't wait to taste it!
Plating
Place all the fillets in a nice serving platter. Then pour all that pan sauce over the scaloppine. Place the lemon slices on top, and that my friends is how you make Quick and tasty Veal Scaloppine al limone!
Can I use beef? Or chicken?
Absolutely, the process will be the same. Just remember, the fillets have to be thin, so pound them out to make it nice and tender! In Italy, we like our veal recipes, however chicken, beef, even pork will be a good substitution!
Let's have a taste
You can already tell how tender this veal scaloppine is, the knife just cuts through like butter. Wow, the flavor is amazing. That flour coating gives the surface this caramelized creaminess, and the lemon, wine, and butter marry well with the sweetness of the veal. Absolutely delicious. Where's the bread, lol, don't want that sauce to go to waste! Scarpetta time!

Ingredients
- 8 veal fillets cut to about an ⅛ inch thickness
- ½ cup type "00" flour (or all purpose unbleached flour, or rice flour for gluten-free)
- Fine sea salt
- Fresh cracked pepper
- 2 Tbsp evo oil
- 1 lemon
- ⅛ cup white wine
- 1 Tbsp butter
Instructions
- Take veal fillets and wrap in plastic wrap. Pound out the fillets with a meat clever working from the center outward. Turn over and do the same to this side.
- Unwrap fillets and place on a plate. Season both sides with salt and pepper.
- In a shallow bowl add flour, salt and pepper. Using a whisk, mix up the flour to evenly season throughout.
- Place veal fillet into the flour and coat both sides well. Shake off any excess flour and place on a clean dish. Continue doing this until all veal fillets are dredged with seasoned flour.
- In a large deep sauté pan drizzle in evo oil. Turn heat to a medium high setting. Once the oil is hot place in veal fillets. Fry for 2 minute, then turn over and fry for another minute. Take the veal scaloppine out of the pan and place on a clean dish. Finish cooking all the fillets.
- Turn heat to low. Pour wine into the pan and with a wooden spoon loosen the caramelized bits on the bottom of the pan.
- Add the butter and two slices of lemon. Let that simmer for a couple minutes. Place the veal scaloppine back into the pan. Squeeze some fresh lemon juice all over the top. Turn off heat and coat the fillets well with the sauce.
- Place the veal scaloppine onto a nice serving platter. Pour the pan juices all over the top, then add the slices of lemon in the pan on top of the veal.
- Ready to serve!

Notes
You can use beef, chicken or pork fillets instead of veal. Just remember to pound them out to make it nice and tender.
Replace the flour with cornstarch or rice flour to make it gluten-free.
