Pizza with mortadella, burrata, and pistachios, the pizza of all pizzas hosting some pretty amazing Italian favorite ingredients. A beautiful thin crisp crust meets melted mozzarella, topped with fresh mortadella and yellow date tomatoes, strands of burrata, and crushed pistachio. The end result, simply exquisite.

Ingredients

  • 1 pizza dough (about 270 g), for our homemade here
  • 140 g fresh mozzarella, slivered
  • 8 yellow date tomatoes, halved
  • 4 thin slices of mortadella
  • 1 burratina
  • 1 tablespoon pistachios, crushed
  • a pinch of salt

Instructions

Stretching the dough:

  1. Take a 12 inch pizza pan and oil it. Take the dough and start to stretch it in your hand pulling it from the edges keeping it in a circular shape. 
  2. Rub some olive oil on your fingers and start to work the dough to the outer edges of the pan. Always work from the center out. Make sure there are no holes or tears. If you get some just overlap the dough and press.

First toppings:

 

  1. Pre-heat oven to 425° F.
  2. Take the slivered mozzarella and sprinkle it evenly onto the stretched dough.
  3. Place the halved tomatoes into the dough and mozzarella. Drizzle with a touch of olive oil, and sprinkle with some fine sea salt.
  4. Place pizza in middle rack of oven and  bake for 10-15 minutes or until bottom, and edges are golden, and also mozzarella is melted.
  5. Take out of oven.

Finishing touches

  1. Take the mortadella and fan it onto the pizza. Top that with  some torn burrata, and finish with the crushed granules of pistachio.
  2. That is it. Just slice up the pizza and serve!

Notes

You can also do this on the barbecue on a pizza stone. I start the pizza in the pan first, then take it off and lay it directly on the stone. This gives you a wonderful crust. You want to get the barbecue temperature to 500° F.

This also can be done in the oven on a pizza stone. Just remember to put the stone in when you start to pre-heat the oven. It takes a bit longer to pre-heat as the stone absorbs quite a bit of the heat.

If you want you can use store bought pizza dough.

If you can find stracciatella, that is that creamy cheese inside the burrata, you can use that.
