Pizza Bianca with Figs and Prosciutto, a seasonal pizza with a combination of flavors taking you out of the pizza comfort zone. The sweet and savory notes of the figs and prosciutto, on a bed of mozzarella, marry beautifully to a crispy pizza crust. Finishing touches, the crunch from the walnuts, and the tanginess of the balsamic glaze. Make tonight your pizza night!

Ingredients

Scale
  • 1 pizza dough, store bought or homemade
  • 200 grams of fresh mozzarella
  • 4 fresh figs
  • 1-2 sprigs of thyme
  • a handful of walnuts
  • 5 slices of  San Daniele or Parma prosciutto
  • a drizzle of balsamic glaze

Instructions

  1. Drizzle 1/2 tablespoon of olive oil to coat bottom of a 12-inch pizza pan.
  2. Gently, with your fingertips, stretch the dough from the center outward to the edges of the pizza pan.
  3. Drain the mozzarella in a sieve taking out excess milk.
  4. Pre-heat the oven to 425°F.
  5. Cut the mozzarella into rounds or slivers and spread on top of the pizza dough.
  6. Wash and dry figs. Cut into quarters and place among the mozzarella, distributing them throughout. Add sprigs of thyme and walnuts.
  7. Place pizza in the oven on medium rack, and cook till the bottom and edges of the crust are golden brown and crispy, the cheese is melted, and the figs slightly caramelized.
  8. Take out of the oven. Arrange prosciutto slices on top of the pizza and drizzle balsamic glaze.
  9. Slice, serve, and enjoy!

Notes

You can also bake your pizza in an outdoor pizza oven, like Ooni for example. Stretch the dough on your work surface with semolina flour at the bottom, then transfer it to your pizza peel. Add the mozzarella, thyme and walnuts, and place in the hot oven. Remember to turn the pizza often so the edges don't burn. The baking times are 5 minutes or less. Take it out and add prosciutto and the balsamic glaze.
