INGREDIENTS
For the sole:
- Sole fillets
- Salt, pepper, onion and garlic powder, paprika
- Flour, for lightly dredging
- Extra‑virgin olive oil
The vegetables:
- Swiss chard, stems and leaves separated
- Extra‑virgin olive oil
- Salt and pepper
- Romano beans, canned
And the pan jus:
- Extra‑virgin olive oil and a knob of butter
- Onion, finely chopped
- Garlic, whole, lightly smashed
- White wine
- Vegetable broth
PREPARE THE VEGETABLES
- Separate the stems and leaves of the Swiss chard, then wash, chop, and steam for 5-10 minutes. Drain, and set aside.
- Drizzle evo oil into a saute pan.
- Add sliced onion, whole garlic, optional chili flakes, and bring the pan to a medium heat.
- Sauté for a couple of minutes, then add the drained Romano beans and finally the steamed Swiss chard.
- Season with salt and pepper to taste.
HOW TO MAKE THE PAN-SEARED SOLE FILLETS
Step 1
Take the sole fillets and cut into smaller pieces as shown in the picture. Season both sides with salt, pepper, onion and garlic powder, paprika.
Season lightly the flour with the same seasonings.
Step 2
Take the seasoned sole fillets and dredge them with the seasoned flour. Coat them well and shake off any excess flour. Place on a dish.
Step 3
Heat up 2 tablespoons of the evo oil in a saute pan. Place the floured sole fillets in and sear for about 1 minute a side or until a nice golden brown color forms.
Step 4
Take the seared fillets out of the pan and place on a paper towel-lined dish.
In the pan you seared the sole in, drizzle in a bit more evo oil. Add the garlic and minced onion. Sauté for 2-3 minutes or until the onions soften. Pour in some white wine and let that dissipate. Add the vegetable broth, a pat of butter, and stir. Let that simmer on low for 5 minutes.
FINAL Step
Lastly, place the seared sole fillets back into the pan with the jus. Let that simmer on very low heat for 2-3 minutes.

Ingredients
Fish:
- 500 g sole fillets
- ½ cup "00" flour
- 1 teaspoon each of salt, pepper, onion and garlic powder, paprika
Jus:
- 1 tablespoon evo oil
- ½ small yellow onion minced
- 1 whole garlic clove
- ¼ cup white wine
- 1 cup vegetable broth
- a knob of butter
Vegetables:
- 2 tablespoons evo oil
- 1 bundle swiss chard
- ½ small yellow onion sliced
- Pinch of red chili flakes
- salt and pepper
- 1 small can romano beans washed and drained
Garnish:
- a drizzle of evo oil
- fresh chopped parsley
Instructions
Fish:
- Cut the sole fillets into pieces, around 4 inches long.
- Place all the seasonings in a bowl, wisk, and season both sides of the fillets.
- Place flour in a bowl, season lightly with the seasoning mixture. Stir until the seasoning is well incorporated in the flour.
- Dredge the seasoned sole fillets well and shake off any excess flour. Place on a dish.
- In a medium sauté pan, drizzle in evo oil, bring to a medium heat, and place the dredged fillets in.
- Sear on both sides about 1 minute each, or until crispy and golden brown. Take out of pan and place on a paper towel lined dish.
Jus:
- Do not clean out the sauté pan we did the fish in, we want that flavor to create the jus for this dish.
- Pour in a touch more evo oil, toss in garlic and minced onion, turn heat to a low-medium setting and saute for about 2-3 minutes or until onions have softened.
- Pour in the white wine, and let that simmer. When the alcohol has dissipated, add in the vegetable broth and a knob of butter. Let that simmer for 5 minutes on low heat.
- Take the seared sole fillets and place gently into the jus. Let that simmer for 2-3 minutes.
Vegetables:
- Trim and wash the Swiss chard, then chop into small pieces. Place in a large pot of boiling water and cook for 5-10 minutes. Take out of pot with a spider, let it drain, and place in a bowl. Set aside.
- Drizzle evo oil into a sauté pan and toss in garlic, sliced onion, and turn heat to a medium. Sauté this mixture for 3 minutes then add the Romano beans.
- Stir and let that cook for 2 minutes, then add the steamed Swiss char. Stir gently, distributing the Swiss chard thoughout so you have a good balance of chard to beans.
- Season with salt and pepper to taste. Stir again and turn off heat.
Plating:
- Take the sole fillets out of the jus and place on a warm dish.
- Drain the jus through a sieve and pour into a saucière.
- For individual plating, spoon some of the Swiss chard and beans into a shallow bowl. Place a couple of the sole fillets on top.
- Pour the jus all around so it creates a shallow pool on the edges.
- Drizzle a bit of evo oil on top and finish with a sprinkle of chopped parsley. And if you wish, a twist of black pepper.
- Ready to serve, enjoy!
Notes
This recipe can be also done with different types of white fish like basa, cod, halibut etc.
For the greens, spinach, or broccoli rabe would be a great substitution.
