I am a total potato lover. I could eat them everyday, however, I like that I make them once in a while so every time we eat them we are thrilled and delighted. This side dish came to me some time ago while watching Jamie Oliver. He had boiled some potatoes then seasoned and smashed them down. I was totally surprised and enthralled to watch more. The real just of it was how they turned out, golden and crispy on the outside. More so, there was this beautiful softened mash on the inside. A potato lover's dream.
Today, I am so excited to share this side dish with you. I have made it many times, and shared it with family, friends and co-workers, and the feedback is always incredible. Well loved, and one they love doing over and over. Let's get into the kitchen and cook up some comforting and delicious Oven Roasted Smashed Rosemary Baby Potatoes!
Ingredients
This is a super simple dish and one that won't kill the wallet. Let's take a look at what is needed:
- 16-18 red skin baby potatoes
- Extra virgin olive oil
- Garlic
- Rosemary
- Salt, pepper, paprika
Substitutions
Like any recipe, you could substitute some of the ingredients for others. Here are some suggestions:
- Instead of the red skin baby potato, you could use Yukon gold or even the multi-colored baby potatoes.
- I have found baby potatoes or fingerling potatoes work the best but sometimes we have to work with what we have, so regular Yukon gold or red skin potatoes would be fine. Just cut them into large chunks. Do not take the skin off. I will tell you why in the instructions.
- For the herbs, you could use oregano, or thyme. I love the rosemary, it marries so well with the potato and garlic.
- If you don't have fresh herbs, the dried rosemary will work, too. However, the fresh rosemary does have more aromatics and flavor.
Getting into the nitty-gritty of this recipe
It is time to make these wonderful Oven Roasted Smashed Rosemary Baby Potatoes. This is a super easy recipe with literally three steps. Here is the first step:
- Firstly, wash the potatoes. Do not peel them. Leave the skin on, that is what is going to hold the potatoes together when you smash them a bit.
- Then, place them in a pot of water and once they start to boil, cook them for 15 minutes, or when pierced with a knife it goes in easily.
- Drain and place in a bowl.

Now that we have the potatoes somewhat cooked, we are ready for the second step: season them up.
- Pour some good quality e.v.o. oil all over the baby potatoes. Season with salt, pepper, paprika, and a couple garlic cloves, whole, and pressed to release their aroma.
- Add in some fresh sprigs of rosemary.
- Give it a gentle toss making sure all the seasoning is well incorporated over the potatoes.
Time to get our lovely potatoes ready for the oven
I love this part, I don't know why, but it brings out the child in me. Let's have a look at the third and final step:
- Grab a nice size baking dish. I chose a round one, but a square or rectangle baking dish will work just as well. I place parchment paper inside the dish. This will save some nasty clean up and scrubbing time after.
- Place the dressed potatoes into the dish and with a potato masher, a spoon, the bottom of a glass, or even with your fingers, press lightly down on the spuds so that they crack open and flatten a bit. Don't beat them up too much, or else we will have a mash. Not really what we want to achieve here.
- Distribute the rosemary all over the smashed lovely morsels.
- Pre-heat the oven to 375°F convection, or 400°F normal bake.
- Place the potatoes into the oven on the middle rack and bake until crispy, and golden. If you want a bit more crisp on the surface, turn the oven to grill and that will seals the surface. However, watch it carefully because this Oven Roasted Smashed Rosemary Baby Potatoes could burn quickly and go from golden to black.

Ingredients
- 16-18 red skin baby potatoes
- 2 cloves of garlic, whole
- 2 tablespoons extra virgin olive oil
- ½ tsp each salt, pepper, paprika
- 1 sprig fresh rosemary (1 tablespoon fresh rosemary leaves)
Instructions
Boiling the potatoes:
- Firstly, wash the potatoes really well making sure there is no soil stuck in the dimples or grooves.
- Place the potatoes into a large pot of water.
- Bring to a boil and cook for 15 minutes.
- Drain and place in a bowl.
Dressing the potatoes:
- Drizzle the e.v.o. oil all over the potatoes.
- Season with salt, pepper, and paprika. Throw in the rosemary leaves and garlic. Give the garlic a little press to release its aroma and flavor into the mix.
- Toss gently so that the seasoning and herbs get all up into the potatoes.
Time for the oven:
- Place the dressed potatoes into a baking dish lined with parchment paper. Give the potatoes a gentle press with a potato masher, spoon, or your fingers. Don't press too hard to break the potatoes into a mash. Just do it until the potato cracks open and flattens a bit.
- Distribute some more sprigs of rosemary throughout the dish.
- Pre-heat the oven to 375°F convection, or 400°F normal bake. Place potatoes on the middle rack of the oven and bake for 20 minutes or until beautifully golden and crispy on the surface.
- If you want them super crispy, on the last few minutes of baking turn the oven onto the grill setting and watch the dish carefully so it does not burn.
Plating:
- Place the potatoes onto a nice serving dish. You could garnish with some fresh rosemary if you wish.
- Ready to serve.

Notes
You can substiture other types of potatoes like Yukon gold, or the multicolored potatoes. However, the baby potatoes, or fingerling, work best for this type of dish.
If using the larger whole potato, cut it into large chunks and leave the skin on.
You could use dried herbs if you do not have fresh. However, fresh herbs have more flavor and aromatics.
