One pan meatballs with Brussels sprouts and potatoes
This is another great example of a series of one pan meals we made, from salmon to chorizo sausage, to rice and fish, or chicken. Indeed, I am thinking that many others will come. I always hear from people that they never know what to make for dinner. My answer to that is, try one of our one pan dinners. I have really enjoyed the simplicity of the recipes, and also how little time it took to put it together. I would have to add that this One pan meatballs with Brussels sprouts and potatoes, won't break the bank.
Why this One pan meatballs with Brussels sprouts and potatoes is so appealing
First of all, it is nice to be able to put a meal together in one pan and have it cook all together. Here are some other reasons why you would want to make this One pan meatballs with Brussels sprouts and potatoes.

- Parchment paper
- A bowl to mix the meat for the meatballs

- A ramekin
- A mixing spoon
- A good knife for prepping veggies
- A cutting board
Ingredients for our One pan meatballs with Brussels sprouts and potatoes
The only thing that requires a bit of prep, is the meatballs. However, the accompaniment is quite simple. Let's take a look at what we need:
- Ground pork (or any ground meat you prefer)
- Egg
- Grated Parmigiano
- Broken up day-old bread
- Italian-style fine bread crumbs
- Milk
- Red onion
- Tomato paste
- Salt and pepper
- Brussels sprouts
- Yellow potatoes
- Garlic
- Dried oregano
- Dried thyme
- Dried rosemary
- Fresh flatleaf parsley
- Salt and pepper
- Evo oil
Mixing the meat for the meatballs
The first thing that you want to do is get the ground pork mixture all mixed up. This is what we need to do:
- Firstly, add the crumbled up day-old bread in a ramekin. Pour in the milk and let sit for a few minutes until the bread absorbs most of the liquid.
- Secondly, in a medium bowl break up ground pork, add in the egg, grated Parmigiano, minced garlic, and finely chopped red onion.
- Thirdly, squeeze out the excess milk in the bread and add that to the mix lastly scoop in the tomato paste and then sprinkle in Italian-style bread crumbs.
- Lastly, season with salt and pepper and give the mixture a good toss either with your hands or a fork, until well incorporated. Cover and place in the fridge for 1 hour, or overnight.
Prepping the veggies for this One pan meatballs with Brussels sprouts and potatoes
We have our meat mixture marinating in the fridge. Now, time to prep the veggies:
- Wash and cut the potatoes into quarters.
- Trim and wash the Brussels sprouts.
- Place a medium pot of water on boil. Toss in potatoes and brussels sprouts, and when it begins to boil, cook for 10 minutes. Drain and set aside.
Forming the meatballs
These are not your normal meatballs, they have an oblong shape. It is the way my mom liked to make her polpette, and I like to showcase that, some time. Plus, it works so well in this One pan meatballs with Brussels sprouts and potatoes. This is what you do:
- Firstly, take the meat mixture out of the fridge and uncover. Scoop a heaping tablespoon of the meat mixture into the palm of your hands, and from a ball. Then roll it from side to side making the ball form an oval. Place on a dish.
- Secondly, do the same with the rest of the pork meat mixture until all used up. If you have leftover and cannot make a full meat ball, just add bits to the existing meatballs and re-shape them.
Getting the One pan meatballs with Brussels sprouts and potatoes ready for the oven
We are almost ready to cook, just a few more details to attend to:
- Preheat oven to 400° F/200° C.
- Dress the potatoes and brussels sprouts with evo oil, pressed garlic cloves, salt, pepper, dried thyme, and rosemary. Give it a toss.
- Place the meatballs sporadically on a parchment-lined baking sheet.
- Arrange the dressed potatoes and brussel sprouts all around the meatballs.
- Place the dried thyme sprigs on top.
- Place in the middle rack of oven and bake for 20 minutes.
- Turn heat down to 350° F/180° C and bake for an additional 5 minutes.
Our dish is ready to serve
Place the meatballs, potatoes, and brussels sprouts on a nice oval serving dish, or whatever serving dish you have. Discard garlic and thyme sprigs. If you want to serve informal, you can just leave the meal in the pan and serve on the table like that. People can pick and choose as they wish.
Time for a taste
I love how the meatballs have flavored the potatoes and brussels sprouts with their juices, yet allowing the flavor of the veggies to shine. The meatballs are moist, and just melt in your mouth. The herbs come through subtly letting the sweetness of the pork come through, and that tomato paste adds a nice brightness to the mix.
Let's talk potatoes and brussels sprouts. Crispy on the outside and soft and tender on the inside, nicely seasoned with the thyme, rosemary, and garlic. What more can I say. Ingredients
Meatballs:
- 300 g ground pork
- 1 large egg
- 1 slice day-old bread
- ¼ cup milk
- 2 tablespoons Italian-style fine breadcrumbs
- 1 tsp dried oregano
- 1 tablespoon chopped flat leaf parsley
- 1 small garlic crushed and minced
- 2 tablespoons finely chopped red onion
- 2 tablespoons grated Parmigiano
- 1 tablespoon tomato paste
- salt and pepper
Veggies:
- 360 g (2 cups) yellow potatoes cut into quarters
- 150g (1 cup) trimmed Brussels sprouts
- 2 tablepoons evo oil
- 1 small garlic clove pressed
- Salt and pepper
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 3 sprigs dried thyme for baking
Instructions
Meatballs:
- Break up day-old bread into a ramekin and pour milk over. Let that soak for a few minutes.
- In a medium bowl, break up ground pork, Add minced garlic, finely chopped red onion, egg, grated Parmigiano, dried oregano, chopped parsley.
- Squeeze out excess milk from bread and add to the mix, along with the Italian-style breadcrumbs, and tomato paste.
- Give it a good mix either with your hands or a fork until well incorporated. Cover and place in the fridge for 1 hour or if you want you can leave it overnight.
Veggies:
- Wash and cut potatoes into quarters. Leave the peel on.
- Wash and trim brussels sprouts, leave whole.
- Bring a large pot of water to boil, add the potatoes and brussels sprouts and when it comes to boil, cook for 10 minutes.
- Drain and place in a medium bowl. Dress with olive oil, pressed garlic cloves, dried thyme and dried rosemary. Toss.
Shaping the meatballs:
- Take the meat mixture out of the fridge. Uncover. Scoop 1 heaping tablespoon of the mixture into the palm of your hand. Roll into a ball, then roll the ball side to side to make it into an oval shape. Place on a dish.
- Continue doing this until you have finished all the meat mixture. If you have a little mixture leftover and you cannot make another meatball, add a little of the mixture to all the meatballs and re-shape.
Assembly:
- Pre-heat oven to 400° F/200° C.
- Line a 12 x 14 baking sheet with parchment paper. Place the meatballs sporadically onto the pan.
- Take the dressed potatoes and brussels sprouts and arrange them all around the meatballs. Place a few of the sprigs of dried thyme on top.
- Place in the middle rack or the oven and bake for 20 minutes.
- Then turn heat down to 350° F and bake for an additional 5 minutes.
- Take out of oven and spoon onto a serving platter.
- Ready to serve.

You could use ground beef, lamb, or chicken for this recipe.
If you want, serve this meal right on the pan. People can pick and choose as they wish right off the pan.
Serve with some good crusty bread.
