How to make Olive and Anchovy Spirals with butter puff pastry

First, defrost a sheet of butter puff pastry. In a food processor, blitz olives, anchovies, capers, parsley, lemon zest and e.v.o. oil. Then, add lemon juice and give it a stir. Unroll the puff pastry and cut the sheet in half lengthwise. Spread evenly half the olive mixture on one half, leaving an empty border all around.
Starting at one of the shorter ends, roll the pastry tightly. Wrap in plastic wrap. Repeat this process for the second log, then place both logs in the freezer for 2 hours until firm (it's easier to cut them).
Take one log out of the freezer and cut into ¼ inch (5 mm) thick rounds. Place on a parchment-lined baking sheet, leaving some space in between. Do the same for the second log.
Preheat oven to 375 degrees F (190C). Bake on the middle shelf for about 20 minutes or until crisp and golden.
