  • 4 English muffins
  • 1 portabello mushroom sliced
  • 1 avocado pitted and skinned
  • 1 1/4 cups of garbanzo beans (chick peas) cooked
  • 1 cup red lentils cooked
  • 1/4 cup yellow onion chopped
  • 1/4 cup bread crumbs
  • 1/4 cup chick pea flower
  • 1 egg
  • 1/2 teaspoon tumeric
  • 1/2 teaspoon cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon fresh basil chopped
  • 1 teaspoon thyme
  • 1/2 teaspoon dried rosemary crumbled
  • 1 table spoon onion powder
  • 1 teaspoon mustard powder
  • 4 leaves of iceberg lettuce
  • 1 Roma tomato sliced
  • 2 dill pickles sliced
  • Salt and pepper to taste
  • For the avocado sauce!
  • 1 avocado
  • 1 tablespoon fresh parsley chopped
  • 2 tablespoons fresh basil chopped
  • 2 table spoons extra virgin olive oil
  • 1 tablespoon mayo
  • 1 teaspoon lemon juice
  • salt and pepper to taste

Instructions

  1. In a saute pan add 1 table spoon olive oil
  2. Toss in sliced mushrooms, thyme, rosemary.
  3. Add salt and pepper to taste
  4. Cook for about 10 minutes and set aside to cool
  5. In a food processor blend chick peas, lentils, mushrooms, onions, 1 tablespoon olive oil
  6. Blend till it forms a loose puree
  7. Add egg,1/8 cup chick pea flower, bread crumbs
  8. Blend again till mixed
  9. Add oregano, tumeric, cumin, onion powder, parsley, 1 table spoon fresh basil, salt and pepper to taste.
  10. Scoop a handful of mixture into your hand and form a ball then work it into a nice round patty, approximately 3 inches (7.5cm) in diameter.
  11. Dust with a bit of chick pea flower and set on some parchment paper.
  12. Repeat this till mixture is finished.
  13. Place parchment paper on top and put into the refrigerator to cool.
  14. In a saute pan add 1 tablespoon olive oil and heat.
  15. Place the patties into the pan and brown both sides.
  16. Remove from heat and place on a dish.
  17. Preheat bbq to around 350 f and place burger on grill till grill marks form.
  18. To cross hatch the grill marks simple rotate the patties 180 degrees.
  19. Repeat this for the other side.
  20. Cut English muffins in half and butter both sides
  21. Place on upper rack of grill
  22. Grill till just slightly toasted
  23. In a food processor blend avocado leftover basil, mustard powder, paprika, mayo salt and pepper.
  24. Blend till creamy
  25. Take the English muffin and place patty
  26. Put a nice dollop of the avocado mixture on top
  27. Add the lettuce and tomato
  28. Sprinkle a bit of salt on the tomato
  29. Add a couple of dill pickle slices
  30. Top with the other English muffin half

Notes

This recipe will make 6 patties. Just freeze the extra patties in an air tight zip lock bag.
