Mixed Berry Lazy Day Pies

Mixed Berry Lazy Day Pies amazingly cute and delectable pies that will surely bring a smile to whoever has one in front of them. These small bundles of joy host a flaky light melt in your mouth crust, some plump juicy sweet berries, and a luscious layer of mascarpone topped with wonderful meringue!

Ingredients

For our homemade pie dough, see here (You will need just half of the dough recipe, or make more)

For the filling

  • 1/2 cup cut up strawberries
  • a handful of blackberries
  • 1 Tbsp lemon zest
  • 1 Tbsp lemon juice
  • 1/2 tsp vanilla
  • 1 Tbsp maple syrup
  • 3 Tbsp mascarpone cheese
  • 1 tsp maple syrup
  • 2 Tbsp half and half cream
  • 1 Tbsp organic cane sugar

For the Meringue:

  • 2 egg whites
  • 1/2 tsp cream of tartar
  • 1 Tbsp organic cane sugar

Instructions

The dough:

  1. Place your pie dough on a lightly floured surface. Cut the dough into three equal rounds.
  2. With a rolling pin roll out the rounds into a 6-inch x 1/8 inch thick circle. Do the same for the other two rounds of dough.

The berries:

  1. In a bowl macerate the berries with the maple syrup, lemon zest, lemon juice, and vanilla.

The assembly:

  1. Preheat the oven to 375 degrees F.
  2. Place dough circles onto a parchment-lined baking sheet. Leave a nice amount of space between them.
  3. Take a tablespoon of the mascarpone mix and spread it onto the dough circles. Leave a good inch around the outside edge free.
  4. Spoon a third of the macerated berries onto the mascarpone. Take the outer edges and fold them in creating a bowl.
  5. Brush the top edges with the half and half and sprinkle with some cane sugar and into the oven they go. Bake for 20 minutes or until they are golden in color.
  6. Take out of the oven and let cool on the baking sheet.

Meringue:

  1. Preheat the oven to 350 degrees F.
  2. Separate two eggs and take the whites and add cream of tartar. With a hand blender, start to whip and slowly add the sugar a little at a time.
  3. Continue whipping until stiff peaks form. Put meringue into a piping bag and pipe into the center of the lazy pies.
  4. Place back in the oven. Bake for 5 minutes or until the meringue turns a nice caramel or golden color.
  5. Take out of the oven and let cool.

Ready to serve! Enjoy!

Notes

Make sure to keep an eye on the pies when baking the meringue, because it could burn easily.

If meringue is not your thing, then whipped cream or a dollop of ice cream would work fantastically.
