We all run busy lifestyles. How about taking out of the freezer some cod fillets, letting them thaw, and at dinner preparing these delicious Mediterranean-style baked cod fillets with olives and capers? In about 30 minutes you will have a meal that everyone will love. Have some bread ready, because I'm sure, there will be some serious bread dipping going on.
The ingredients
Other than cod fillets, all you need is:
- garlic
- cherry tomatoes, halved
- capers
- black olives, pitted
- evo oil, salt, pepper, and parsley
That's it. Pretty easy, right?
Easy and quick preparation
- Thaw your cod fillets and pat dry with a paper towel.
- Lightly oil a baking dish. Arrange the cod fillets on the oil.
- Drizzle a little more oil on top. Season with salt and pepper (or peperoncino). Add the whole garlic, capers, pitted olives, the halved cherry tomatoes, and scatter all around.
- Lastly, sprinkle with chopped parsley.
- Bake at 200°C/400°F for about 20-25 minutes, depending on the thickness of the fish. If it seems the fillets are getting too dry, baste them with the juices or add a splash of white wine and let dissolve.

- A fresh mixed salad, or mashed potatoes are a good compliment to the dish. Even some lovely roasted potatoes would work so well!
