Italian Classic Tiramisu

  • 275 g mascarpone
  • 3 fresh organic eggs, divided
  • 60 g light brown sugar (or granulated sugar), divided in half
  • 1 cup of espresso coffee
  • 2 packs of ladyfingers cookies
  • unsweetened cocoa powder
  • chocolate shavings (optional)


  1. To prepare the tiramisu, start making the coffee, which must be prepared with a Moka Express.
  2. Pour into a shallow bowl, sweeten it to your liking and let cool .
  3. Separate the egg yolks from the whites.
  4. In a medium bowl, whip the egg yolks with half of the sugar until mixture is light and creamy.
  5. In another bowl, work the mascarpone with a spoon or spatula until creamy and add the mixture of egg yolks and sugar.
  6. Mix well so that the mixture is completely homogeneous.
  7. In another bowl, beat the egg whites with the remaining sugar until stiff peaks appear.
  8. Add it to the mixture of egg yolks and mascarpone and incorporate it gently with a spatula working it from bottom to top until well combined.
  9. Soak the ladyfingers in coffee, but without letting them in, otherwise they will be too wet.
  10. Arrange the ladyfingers in a square or rectangular pan to form an even layer, breaking them in half if necessary in order to fit the bottom.
  11. Spread evenly 1/2 of the mascarpone cream on the ladyfingers.
  12. Dust with cocoa powder and chocolate shavings (optional).
  13. Arrange a second layer of soaked ladyfingers and spread the remaining mascarpone cream.
  14. Sprinkle evenly with cocoa powder.
  15. Cover tiramisu with plastic wrap and refrigerate for 2-3 hours.
  16. At the moment of serving you can sprinkle the Tiramisù with chocolate shavings.


Adding liquor in the coffee is optional. As well as chocolate shavings in the middle layer and on top. You could also sprinkle the cocoa powder on top at the moment of serving.
