Grilled Tofu Pepper Skewers in a Pesto Sauce

Ingredients

  • 1 package of firm tofu cut into cubes
  • 1 medium orange pepper chopped into 3 cm squares
  • 1 medium red pepper chopped into 3 cm squares
  • 3 tablespoons of pesto
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Place cubed tofu into a bowl.
  2. Toss in peppers.
  3. Mix with pesto, olive oil, salt, pepper, and onion powder. Mix gently as not to break up the tofu, and let sit for a few hours.
  4. Submerge bamboo skewers into warm water and let soak for a few hours.
  5. Preheat barbecue to 400° F.
  6. Skewer tofu and peppers alternating peppers in between the tofu balancing the colors.
  7. On a paper towel drizzle some olive oil and carefully grease up the grill.
  8. Place skewers on the grill, cook till char marks form, roughly 3-4 minutes then turn 180 degrees.
  9. Brush with remaining marinade.
  10. Cook for another 3 minutes.
  11. Flip skewers over and cook for another 3-4 minutes and turn 180 degrees.
  12. Brush again with remaining marinade.
  13. Cook for an additional 3 minutes.
  14. Take off grill and plate.
