- 2 medium purple or golden beets
- 2 medium carrots
- 1 small yellow onion
- 2 tablespoons extra virgin olive oil

- Peel onion and slice.
- Rinse farro under cold runny water, then place in a pot with triple the amount of water and a good pinch of salt. Boil for about 25-30 minutes or according to package instructions.
