Easy Strawberry and Rhubarb Crisp. When both strawberry and rhubarb are at their peak, there is nothing better than combining them in a delightful crisp. Light, juicy, plump, and crunchy. Pair it with a dollop of good vanilla ice cream for the perfect summer dessert.

Strawberry and Rhubarb Crisp
Actually, before coming to Canada, I did not know what a crisp was. Sometimes called crumble, it is a mix of fruit filling and a crisp crumbly top mostly made of rolled oats. Of all the fruit combinations, strawberry and rhubarb is my favorite one, also turned into a crumble pie.
Filling Ingredients
Not too many ingredients. We want the seasonal fruit to be the star of the show.
- strawberries
- rhubarb
- lemon juice and zest
- vanilla extract
- maple syrup
- corn starch
Topping Ingredients
As for the topping ingredients, I decided to add some granola and some chopped almonds for added crunchy texture. Skip, if you wish so, and replace with more rolled oats. However, we highly recommend it.
- old fashioned rolled oats, not quick oats
- granola
- all-purpose flour
- cinnamon
- cardamom
- nutmeg. We like to use the whole nutmeg and grate it ourselves. A pinch goes a long way
- salt
- cane sugar, or brown sugar
- butter, cold, cubed
- almonds, a handful, chopped, for texture
Easy Preparation
In a large bowl, add quartered strawberries, chopped rhubarb, vanilla, lemon juice and zest, maple syrup, and corn starch. Toss gently and set aside.
In another bowl, combine rolled oats, granola, flour, sugar, and spices. Add cubed butter and work with your hands until crumbled in the mixture. Lastly, add the chopped almonds.
Spoon the strawberry rhubarb filling at the bottom of the baking dish and spread out to cover the base.
Grab handfuls of topping and sprinkle over the fruit filling evenly.
Place in the preheated oven and bake for about 45 minutes or until the fruit is bubbling and the top is golden brown. Broil for a minute if the top is not browning, or cover with foil if it is browning too much.
Take out of oven and let rest for at least 20 minutes before serving.
Serving suggestion
Truly, we like to place a couple of scoops of the strawberry and rhubarb crisp in a bowl and top it with a dollop of vanilla ice cream. The combination of crisp and ice cream is an absolute delight in the summer.
Tomorrow is Canada Day, the colors of this strawberry and rhubarb crisp with vanilla ice cream are perfect to commemorate the red and white Canada flag.
Happy Canada Day, everyone! Enjoy!
