Always inspired by our Italy trips
One thing I love about Italy is how the ingredients inspire us to create simple and delicious food. These salmon steaks were something I had put together at Nicoletta's parents place for lunch. Truthfully, I usually use the salmon fillet, however the salmon steaks are more common in Italy. I am preferring the bone-in as it provides more flavor and moisture, especially roasted with onions and garlic. Absolutely delicious, and today I am sharing this recipe with you.
Ingredients for this Easy Oven baked Salmon steaks
I think you are gong to love how easy today's recipe is, and how little you need to make it happen! Let's look at the ingredient list:
- Salmon steaks
- Extra virgin cold pressed olive oil
- Garlic
- Onion
- Salt and pepper
- Dried oregano
- Fresh parsley
- Chili flakes
- Lemon slices
Here is how we prepare our salmon
- Pre-heat oven to 375° F.
- First wash and pat dry the salmon steaks. Season with salt, pepper, and dried oregano, on both sides.
- Peel and slice your onion in rounds about an ⅛ of an inch thick. You can use either yellow or white onion, whatever you have on hand.
- In a medium size baking dish, one that would fit both steaks in nicely and not crowded, splash in some evo oil enough to coat the bottom of the dish.
- Lay in your onion rounds, and garlic, then season with salt and pepper.
- Wash and slice your lemon into ⅛ inch rounds.
- Place the salmon steaks onto the onions, drizzle with some more evo oil, sprinkle with a pinch of chili flakes, and place lemon slices on top. Sprinkle with fresh chopped parsley.
- Put it in the oven, middle rack, and bake for 20-25 minutes or until middle temp on a thermometer reads 125°F-130°F. If you have wild salmon 120°F-125°F.
- Take out of oven and let rest 5 minutes. That looks so so good. Love the color.
Time to plate
With a spatula, scoop up one of the salmon steaks. Place on your dish, top with the caramelized onions that it baked on, and sprinkle with more freshly chopped parsley.

Ingredients
- 2 salmon steaks
- evo oil
- 2 whole garlic cloves
- 1 onion sliced into ⅛ inch rounds
- 1 heaping teaspoon dried oregano
- 1 Tbsp fresh chopped parsley
- Pinch of chili flakes
- 4 lemon slices
Instructions
- Pre-heat oven to 375° F.
- Rinse salmon steaks in cold water and pat dry with paper towel.
- Season both sides with salt, pepper, dried oregano.
- In a medium baking dish big enough to fit both salmon steaks, drizzle in evo oil enough to coat bottom of pan. Place onion slices and garlic and season with salt and pepper.
- Put the salmon steaks on top of the onions and garlic. Drizzle with more evo oil, and sprinkle some chili flakes in and on top.
- Grab your lemon slices and place two on each salmon steak. Throw some of the fresh chopped parsley on top, then place the baking dish on the middle rack of the preheated oven.
- Bake for 20-25 minutes or until internal temperature reads 125°F-130°F. If you are using wild salmon the internal temp should be 120°F-125°F.
- Take out of oven and let rest 5 minutes.
- With a spatula, scoop up the salmon steaks and place on to a plate. With a spoon, grab some of the caramelized onion on the bottom of the pan and put on top of the salmon. You could sprinkle some more fresh parsley and squeeze the lemon on top.
- Ready to serve!

Notes
You can use salmon fillet if you don't want the bone in. Check for the time with a thermometer.
For the onion, either yellow or white will work, even shallot would work well.
Do not cover while baking, we want to get some nice color on the salmon.
