Creamy Curry Chicken with Ginger, inspiration where you never would have expected it
Usually, when you see a dish like this, you would think that the inspiration came from somewhere exotic like Thailand or Malaysia. However, not the case here. This was inspired by an Italian grocery store magazine that sends us recipes through their website. Most of us growing up Italian never really experienced anything different or cultural, we stuck to what we know and that was Italian cuisine.
Today, Italy is growing in the culinary sense of the word and we are seeing more indulging in recipes like this, full of spice, curries, and cooking techniques that were once unheard of are becoming well liked and tried.
I am so excited to share this Creamy Curry Chicken with Ginger today. I guarantee you, if you follow this recipe, you are going to be blown away by the end result. Nicoletta and I could not stop eating it, it was that good!

Ingredients for our Creamy Curry Chicken with Ginger
Many may think that exotic dishes like this are very complex. However, this is not the case with this recipe. Some pretty basic ingredients found easily at your supermarket. Here is our grocery list:
- Free run, organic chicken thighs, bone in. (Optional, boneless chicken breast)
- Extra virgin olive oil
- Fresh ginger
- Yellow curry powder
- Coconut milk or cream (depending on how rich you want it)
- Red chilies
- Red or yellow onion
- Salt and white pepper
The key is to marinate the chicken
Usually, when we marinate chicken, we do it raw with spices, herbs, oil etc. Not today, this chicken is first sautéed in a pan for a few minutes. While that is happening, we are also toasting our yellow curry in a cast pan. These are the marinating steps:
- Take your cubed chicken thighs that have been sautéing in a pan seasoned with salt and white pepper. Place in a glass bowl to cool.
- Once chicken is cool, add in the toasted yellow curry powder and coconut cream and give it a good toss, until the chicken and that spiced creamy sauce have gotten to know each other really well.
- Cover with plastic wrap and place in the fridge overnight, or for at least a couple of hours.
Creamy Curry Chicken with Ginger, bringing it together
To sum up, our chicken has been marinating overnight and it smells amazing! Time to take it to the next level:
- In a medium deep sauté pan drizzle in evo oil. Sprinkle in red chili flakes, and add in sliced onion and grated ginger. Turn heat to a medium setting and cook this mixture until onions soften. Make sure not to burn the ginger or onion. Stir it continuously.
- Spoon in your chicken with all the marinating cream. Give the whole thing a good stir and lower heat to a slow simmer. Cook this for 20 minutes, stirring occasionally.
- While the Creamy Curry Chicken with Ginger is simmering, we can cook the rice. Drizzle in some sesame oil, add in Jasmine rice. Then turn on heat and give it a toast. Add in double the amount of water to rice with a sprinkle of salt.
- Bring that to a boil, then turn down heat to a low and cook for 15 minutes with lid on, checking it frequently to make sure it is not burning on the bottom. If it looks a bit dry, just add a bit of water. Turn off heat, keep covered, and let sit 5 minutes.
- Lastly, garnish the Creamy Curry Chicken with Ginger with some fresh chopped coriander (cilantro) or parsley, and it is ready to plate and serve.

The curry comes in beautifully transporting me to exotic places, and that coconut cream and those sweet caramelized onions, with the heat from the chilis, are such a warm, lavish experience. A win-win dish in our eyes for sure!

Ingredients
- 2 chicken thighs (or 1 chicken breast)
- 1 tablespoon yellow curry powder
- ½ cup red or yellow onion, sliced
- 2 ½ tablespoons extra virgin olive oil
- 200 ml coconut milk or cream
- 1 teaspoon fresh chili, cut into thin rounds or a good pinch of dried chili flakes
- 1 heaping tablespoon grated ginger
- salt to taste
- 1 tablespoon fresh parsley or coriander (cilantro), to garnish
- ½ cup Jasmine or basmati rice
- 1 cup water
- a pinch of salt
- a few drops sesame oil
Instructions
Marinating the chicken:
- De-bone the chicken thigh and remove the skin if you wish. I like the skin so I leave it on. Cut the thigh into bite size morsels.
- In a medium sauté pan, drizzle in a ½ tablespoon of evo oil. Toss in chicken, season with salt and white pepper, and turn heat to a medium setting. Sauté for about 10 minutes, then place in a glass bowl to cool.
- While chicken is cooling, toast your curry powder in a pan just until it starts to smoke. Pour your coconut cream into the cooled chicken and add the toasted curry. Give it a good stir, cover with plastic wrap, and place into the fridge overnight.
Cooking the chicken
- Take marinated chicken out of the fridge.
- In a medium deep sauté pan drizzle in the rest of the evo oil. Sprinkle in dried red chili flakes. Drop in the sliced onion, and grated ginger. Turn on heat to a medium setting and let that cook until onions soften. Make sure to stir often so the onions and ginger don't burn.
- Add in your chicken with all the curry coconut cream it marinated in. Give it a good stir and lower heat to a low simmer. Let that cook for 20 minutes, stirring occasionally.
- Garnish with fresh chopped coriander or parsley.
Rice:
- While chicken is simmering, get a medium pot and drizzle in a few drops of sesame oil. Add in rice and turn heat to a medium to high setting. Toast rice for 1 minute, then add water and a pinch of salt. Let that come to a boil then turn heat to a low setting. Stir rice and cover. Let that cook for 15 minutes, then turn off heat and let rest for 5 minutes. Check the rice from time to time, if it seems too dry add a bit more water.
- Plate rice in a bowl, and place curry coconut chicken in another bowl or on top.
- Ready to serve.

Notes
You could use boneless skinless chicken thigh or chicken breast.
As far as the chilis, one could use fresh and slice it into thin rounds.
If you don't want to use the coconut cream then coconut milk works just as well. It will just be a bit more loose in consistency.
Fresh coriander is also known as cilantro, easily found in your local supermarket.
Remember that in the prep time allow for the marinating overnight.
