Cheesy Broccoli and Potato Bake. Boiled potatoes, and steamed broccoli mingle delightfully with extra virgin olive oil, spices, Parmigiano, and mozzarella, sprinkled with seasoned breadcrumbs all roasted to a delightfully crispy golden top. The end result, a soulful compilation that delivers in flavors and textures. This one is a keeper for us. Try it!

Ingredients

  • 6 yellow or yukon gold potatoes
  • 2 medium size heads of broccoli
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup of grated Parmigiano
  • 3/4 cups of mozzarella cut into small morsels
  • 1/8 cup fine bread crumbs
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • pinch chili powder
  • salt and pepper

Instructions

Pre-cooking the potatoes and broccoli:

  1. Firstly, cut the tough part of the stem of broccoli. Then, we want to separate the florets and wash the broccoli.
  2. Secondly, peel, wash and cut the potatoes into nice chunks.
  3. Bring a pot steamer to boil and place the broccoli in. Steam for about 10 minutes.
  4. Remove the broccoli from the steamer and place in a bowl and set aside.
  5. Pour some cold water into a pot and throw the potatoes in. Bring to a boil and cook for 10 minutes. Drain, and place the potatoes into another bowl and set aside.

Combining the ingredients:

  1. Grab a 9 x 14 inch deep baking dish. Drizzle in some of the evo oil and spread it around the bottom and side with a brush.
  2. Toss in the steamed broccoli and the boiled potatoes. Give them a bit of a smash with a potato masher.
  3. Season with the herbs de provence, salt, pepper, paprika, chili powder, onion and garlic powder. Give the whole thing a good mix.
  4. Sprinkle the Parmigiano evenly throughout and place in the morsels of mozzarella. Give the mixture another toss to distribute the ingredients evenly.

Final touches:

  1. Pre-heat oven to 400°F/200°C.
  2. Drizzle more evo oil over the top. Sprinkle the fine breadcrumbs evenly on top.
  3. Place in the oven on middle rack and bake for 20 minutes. 
  4. Lastly, turn on the broiler and roast up the top for 1-2 minutes. Watch it carefully to ensure it does not burn.
  5. Take out of oven and serve.

Notes

You could also use cauliflower in place of the broccoli.

Leftovers keep in the fridge for a couple of days.

If you have leftovers, the best way to re-heat them is to place it in an oven safe dish and heat up in the oven. This will revive the crispness.
