Cheesy Broccoli and Potato Bake
Nicoletta and I were hosting a dinner for family and friend. The main was a tagliata with salsa verde, and we were trying to think of a great side to go with it. Our quick air fryer Parmigiano fries would have been our choice, however, we wanted to change things up a bit.
Usually, most of our inspirations come from what we have on hand in the fridge and pantry. Upon gazing in the fridge, I saw some leftover steamed broccoli and some mozzarella, and there it was, that lightbulb moment. Why not combine the steamed broccoli with some par boiled potatoes and then mix in some spices, morsels of the mozzarella cheese, and grated Parmigiano? I have to tell you, you are going to absolutely love this Cheesy Broccoli and Potato Bake!

There are many reasons for why you would want to make this side dish. Here are a few:

- Lastly, it is cheesy, who doesn't love that?
Ingredients
What I love about this Cheesy Broccoli and Potato Bake is that really there are two main ingredients, and some embellishments. Here is our list to gather up:
- Yellow potatoes
- Broccoli
- Freshly grated Parmigiano
- Mozzarella
- Fine breadcrumbs
- Evo oil
- Salt and pepper
- Paprika
- Chili powder
- Onion and garlic powder
How to make Cheesy Broccoli and Potato Bake
The boiling of the potatoes and steaming of the broccoli you can do ahead of time. If you already have leftover boiled potatoes and broccoli, head to the set of pictures with the next steps.
- Clean and separate the florets of broccoli, place them on a steaming tray in a pot over boiling water. Steam for roughly 10 minutes, take out, and place in a dish. Set aside.
- Peel and cut potatoes into nice size chunks and place in a large pot of cold water. Bring to a boil, then cook for 10 minutes. Drain, place potatoes in a bowl, and set aside.
- Step 1: Drizzle some evo oil into a large rectangular baking dish. Place the steamed broccoli and par boiled potates into the dish. Give them a little smash with a potato masher.
- Step 2: Sprinkle all the seasoning over the vegetables and drizzle some more evo oil over top. Give the whole thing a good toss.
- Step 3: Then sprinkle the top with the the grated Parmigiano. Add in the morsels of mozzarella and give the mixture a toss to distribute the ingredient evenly. Drizzle with more evo oil and dust the top with the fine breadcrumbs.
- Step 4: Lastly, place the dish into a pre-heated 400°F/200°C oven. Bake for 20 minutes. At the end, turn on the broiler and crisp up the top for approximitely 1-2 minutes. Watch it carefully so it doesn't burn. Take out of oven and serve.

Just looking at this Cheesy Broccoli and Potato Bake has me getting super hungry and I can feel my mouth water. That golden crispy cheese nestled into those crispy but billowy potatoes looks absolutely inviting.
Time for a taste. Yum, the potatoes are perfect. They have this wonderful crunch on the surface, more so, when you get into the middle it is like luscious mashed potatoes. The broccoli with its earthy sweetness pairs so well with the potato. However, the cheese is the 'glue' that holds this dish together in a most flavorful and textural way. Finally, it is just beautiful how that fine breadcrumbs add that lovely crust and the spices balance everything so well. I am totally feeling comforted here. In the end, this Cheesy Broccoli and Potato Bake is a win win dish, and really wasn't difficult at all.

Ingredients
- 6 yellow or yukon gold potatoes
- 2 medium size heads of broccoli
- 3 tablespoons extra virgin olive oil
- ¼ cup of grated Parmigiano
- ¾ cups of mozzarella cut into small morsels
- ⅛ cup fine bread crumbs
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- pinch chili powder
- salt and pepper
Instructions
Pre-cooking the potatoes and broccoli:
- Firstly, cut the tough part of the stem of broccoli. Then, we want to separate the florets and wash the broccoli.
- Secondly, peel, wash and cut the potatoes into nice chunks.
- Bring a pot steamer to boil and place the broccoli in. Steam for about 10 minutes.
- Remove the broccoli from the steamer and place in a bowl and set aside.
- Pour some cold water into a pot and throw the potatoes in. Bring to a boil and cook for 10 minutes. Drain, and place the potatoes into another bowl and set aside.
Combining the ingredients:
- Grab a 9 x 14 inch deep baking dish. Drizzle in some of the evo oil and spread it around the bottom and side with a brush.
- Toss in the steamed broccoli and the boiled potatoes. Give them a bit of a smash with a potato masher.
- Season with the herbs de provence, salt, pepper, paprika, chili powder, onion and garlic powder. Give the whole thing a good mix.
- Sprinkle the Parmigiano evenly throughout and place in the morsels of mozzarella. Give the mixture another toss to distribute the ingredients evenly.
Final touches:
- Pre-heat oven to 400°F/200°C.
- Drizzle more evo oil over the top. Sprinkle the fine breadcrumbs evenly on top.
- Place in the oven on middle rack and bake for 20 minutes.
- Lastly, turn on the broiler and roast up the top for 1-2 minutes. Watch it carefully to ensure it does not burn.
- Take out of oven and serve.
Notes
You could also use cauliflower in place of the broccoli.
Leftovers keep in the fridge for a couple of days.
If you have leftovers, the best way to re-heat them is to place it in an oven safe dish and heat up in the oven. This will revive the crispness.
