Avocado on toast has been the latest craze. This breakfast or lunch dish comes in various forms, all of which I have enjoyed, however, I would have to say this inspiration was spot on, and yes I am biased, lol.
There is another star coming to the forefront these days, and that is hemp seed. Some say it is a superfood. Let's take a look at this amazing seed:
A quick look at Hemp:
- Comes from a variety of the plant cannabis sativa plant species that is grown specifically for the industrial uses of its derived products.
- It is one of the fastest growing plants.
- Did you know that its ability to be spun into usable fiber dates back 10,000 years?
- Hemp can be refined into a variety of commercial items including paper, textiles, clothing, biodegradable plastics, paint, insulation, biofuel, animal feed and finally food.
- The hemp seed comes to us in two ways, whole hemp seed or hulled hemp seed.
- Packed with minerals and nutrients, plus a whole lotta protein!
Always interesting when you come upon a new ingredient and find out all the amazing things about it. Today we are using the hulled hemp seed given to us by Mighty Trio Organics. They are located in The Old Strathcona's Farmer's market.

The Million Dollar Question: Does hemp have the same psychoactive effects as cannabis?
The Answer: Hemp has lower concentrations of THC and higher concentrations of cannabidiol(CBD), which decreases or eliminates its psychoactive effects. So simply put, No!
It's Breakfast time, let's make Avocado Egg Toast with Hemp Seeds!
I would have to say for me breakfast is really important. It gets my day going. Staring the day with a fresh healthy meal sets the standard for the rest of the day.
Remember: Healthy body leads to a Healthy mind, and vice-versa!
Things we need:
- Multigrain rich bread
- Organic Avocado
- Free range organic chicken eggs
- Hemp seeds
- Extra virgin olive oil
- Seasoning
- Some kind of condiment
You may be asking what is that pinkish colored spread that I am putting on the bread?
Well, it is a ginger maple cranberry aioli. I had some cranberry sauce that I made left over from another recipe and decided to create a wonderful condiment for this Avocado Egg Toast with Hemp Seeds.
Assembly:
Putting this together is quite easy. First of all, we have to toast the bread. Secondly, on goes the aioli. Thirdly, the avocado. Fourthly, the beautifully cooked egg, and lastly a nice artistical sprinkling of hemp seed.
Look at the lovely earthy colors of this toast. I love the textures and how that hemp seed gracefully rests on the egg and edges of the toast.
Some tips:
- After placing the avocado onto the bread and aioli, season with salt, pepper, lemon zest, and a splash of e.v.o. oil.
- To get the egg nice and round, place an oiled tart ring into the saute pan and crack the egg inside.
- Taking the pan on and off the heat and also having the pan covered with a lid will give you a great cooking result for the egg.
Nicoletta and I are very pleased with how this Avocado Egg Toast with Hemp Seeds turned out. It was very easy to make! I can't wait any longer, have to cut in and have a taste!
The Taste Test:
Oh WOW, the flavors are amazing. I love the nuttiness of the bread along with its crispy edges. The ginger maple cranberry aioli has the perfect amount of acidity and sweetness with a backdrop of fruity to balance things out.
The avocado buttery, rich and so creamy, yum! Look at how that yolk just oozes down the sides of the toast and its yummy rich golden flavor pairs so well with all the other ingredients including the hemp seed and its buttery nutty fibrous profile.
Epiphany:
This I would title "Poor Man's Luxury" because it uses simple ingredients, it's cost-effective, and gives such luxurious delicious results.

Ingredients
- 2 slices whole grain seed bread
- 2 free range organic eggs
- ½ organic ripe avocado
- fine sea salt
- freshly cracked pepper
- 1 tsp lemon zest
- 1 Tbsp hemp seed
- 2 Tbsp e.v.o. oil
Ginger Maple Cranberry Aioli:
- 227 g fresh organic cranberries
- ½ cup fruit juice
- 2 Tbsp maple syrup
- 1 Tbsp honey
- 1 sprig rosemary
- 3 leaves basil torn
- 4 thin slices of fresh ginger
- 1 tsp lemongrass
- 1 Tbsp real mayo
- 1 tsp sesame oil
- ½ tsp roasted garlic paste

Notes
If you don't have the ingredients for the ginger maple cranberry aioli, then use what you have. Combining a jam with mayo, oil, and a pasted garlic will give you a wonderful aioli.
You can make a guacamole and use that instead of the sliced avocado.
You will have ½ an avocado leftover, you can make guacamole with that too, if you wish.
