A Taste of Capri
Torta Caprese is a traditional Italian chocolate cake from the island of Capri, in the Campania region. This beloved dessert reflects the simplicity of Italian baking, where a few quality ingredients come together to create something truly special.
Unlike other chocolate cakes, Torta Caprese is made without wheat flour. Almond flour replaces traditional flour, creating a dense yet tender cake with a slightly crisp exterior and a soft, fudgy center. It is a rustic yet elegant dessert that has become a symbol of the island's culinary traditions.
The Story Behind Torta Caprese
Like many Italian recipes, Torta Caprese comes with a charming origin story. According to tradition, a baker on Capri accidentally forgot to add flour to a chocolate cake he was preparing. The unexpected result was so delicious that it became a new classic.
Whether the story is true or not, this accidental creation has become one of Italy's most beloved chocolate desserts, now enjoyed by chocolate lovers around the world.
What Is Torta Caprese?
Torta Caprese is a flourless chocolate cake made with dark chocolate, almond flour, butter, eggs, and sugar. The almond flour gives the cake its signature moist texture, while the whipped egg whites help create a lighter, tender crumb.
Traditionally, it is finished with a dusting of powdered sugar, often using a stencil to create a decorative pattern inspired by the island's style.

Tips for the Best Torta Caprese
Use Good Quality Chocolate. Chocolate is the main flavor in Torta Caprese, so choosing a good quality dark chocolate will make a noticeable difference. For the best texture, use a chocolate bar rather than chocolate chips, as it melts more smoothly into the batter.
Do Not Overbake the Cake. Keep an eye on the baking time and avoid overbaking, as this can make the cake dry.
Let It Cool Before Serving. Allow the cake to cool completely before slicing. This gives the texture time to set and allows the chocolate and almond flavors to fully develop.
How to Serve Torta Caprese
Traditionally, Torta Caprese is served simply with a dusting of powdered sugar, allowing the deep chocolate flavor and tender texture to shine. It is wonderful alongside an espresso, tea, or a small glass of dessert wine. For the best experience, serve a slice with whipped cream and strawberries on the side, or a berry coulis drizzled on top.
For us, this cake also holds a special memory. One year, Loreto chose Torta Caprese as his birthday cake, and we celebrated with a candelabra cake topper glowing on top - a simple moment that made this classic Italian dessert even more meaningful.
How to Store Torta Caprese
Store the cake covered at room temperature for a few days, or refrigerate it for longer storage. Bring it back to room temperature before serving for the best texture.
