Apple Blueberry Spiced Porridge, always a welcome comfort breakfast on those days where winds outside are chilling and a busy day is calling you out. Its creamy texture and warm fall flavors of apple, rolled oats, and spices of maple syrup, cinnamon and nutmeg can’t help but make you feel cared for and healthy.
Porridge has gone a long way since the times of granular, steel tasting, bland. A kids nightmare. I remember my mother making porridge and me thinking of how much brown sugar I was going to cover it with or maybe some chocolate chips, didn’t happen, my mother would say “do you know how much money I spent on dentists and fluoride treatments on you so you could have beautiful teeth, and you want to wreck it all”. It was true, she did spend a lot of money on ensuring we had great teeth, hours with my mouth filled with fluoride doused cotton. Back in those days that was how it was done, not like these days a quick mouthwash and you are done. I have to be honest, I am so thankful now as I have been fortunate to have great teeth health, and as most don’t like trips to the dentist.
Enough of reminiscing and memories and back to this amazing breakfast dish Apple Blueberry Spiced Porridge!
I know you may be thinking this doesn’t look healthy, but I think of moderation and balance. I call it the zero principle. There are times of great healthy meals and there are times for those healthy but not natural health healthy. It is always a balancing act and we are all so different in the metabolism age. There are people who eat anything they want, abuse their bodies and live to very old ages, and there are people who eat healthy, exercise, and pass early. What is the right answer, I don’t know? I think that answer lies within all of us. All I know right now is Nicoletta and I thoroughly enjoyed this porridge and the wonderfully delectable apple blueberry topping, with that creamy dollop of fresh farm double cream.
Apple Blueberry Spiced Porridge, healthy or not? Let’s find out.
Every once in a while Nicoletta and I crave that warm creamy breakfast. One that makes us feel cared for, and comforted. On this particular morning our thoughts are just that and fortunate enough in our pantry we had some rolled oats, and steel cut oats. In the fridge apples, so kindly given to us by our fellow food blogger, Margaret, from Kitchen Frau. These apples have blessed many a recipe that we have posted, like this one, and have yet to post. I would have to say they are incredible apples, so tasty, and stayed fresh for an incredibly long time, so Margaret if you read this we will stand in line for your apples next year! If some fall in our lap again we will do them justice and be as creative as creative can be. The other ingredients, blueberries that we received from my mother, fresh frozen to preserve that plumpness. We shall not forget the spices and sweetness, starting with the nutmeg, cinnamon, brown sugar, some slivered almonds, and that incredible maple syrup with vanilla bean, bought at Duchess Provisions, a store dedicated to foodies out there that love great quality and ingenuity.
In a pan I melted some butter and sauteed the apples till they started to caramelize with the melted sugar and spices. A handful of raisins in the mix for texture and taste. At that point I threw in the blueberries not wanting to cook them to the point of releasing those juices but just enough for them to plumb up. In a medium pot I mixed the rolled oats and steel cut oats with milk, some cinnamon, just a pinch of brown sugar. You may be asking why mixing the two types of oats? Rolled and steel cut, knowing rolled oats cook more quickly, while steel cut oats take some time. Well, my answer is this, I like different textures the rolled oats will give that creaminess, the steel cut will remain firmer, thus giving us different levels of play in our mouths. I cook it till the preferred texture is achieved.
Assembly is easy, spoon the porridge into a bowl top with some sauteed apple blueberry mixture. Sprinkle some slivered almonds. A drizzle of the vanilla bean infused maple syrup, and a dollop of double cream and we are set to relax and savor each bite of this luxurious breakfast.
The textures of this dish wonderful, from the creaminess of the rolled oats, the firmness of the steel cut oats, those little crunches of slivered almonds, and that velvety silkiness of the sauce that forms from the melting double cream and the maple syrup, apple, blueberry juices. The flavors beautiful sweet cinnamon spiced apples, blueberries plump rustic reduction, and golden raisins which I may say all explode in your mouth with pools of juice that the oats quickly absorb, allowing the final hits of maple and cream to slowly slide in, giving your taste buds a symphony of tastes.
So getting back to the question healthy or not? I see it this way and I am not going to say this is the ultimate truth, it is my truth. Yes this recipe has healthy notes:
- fiber from the rolled oats and steel cut oats .
- Nutrients and minerals, and anti oxidants from the fruits.
- Heart health from the almonds.
- The cinnamon for its digestive aid elements.
- Nutmeg for the calmness it promotes for people with insomnia.
- sugar content from brown sugar and maple syrup.
- Fat content from the double cream.
Well more benefits than harms, and I want to add that I felt soothed and cared for, happy with the flavors, and to me these feelings do nothing than relax the body and release great hormones to set the stage for the day on great notes. As they say, you get more from water than a hard stone. In summary, a balance of mental, physical, emotional and spiritual.
My vote, healthy!

- 1/2 cup rolled oats
- 1/4 cup steel cut oats
- 3/4 cup milk
- 1/4 cup water
- pinch of salt
- Dash of cinnamon
- 1 tsp demerara brown sugar
Apple blueberry topping:
- 2 apples, peeled, cored, diced
- 1/4 cup frozen blue berries
- 2 tbsp golden raisins
- 1 tbsp butter
- 1 heaping Tbsp demerara sugar
- 1 tsp cinnamon
- Pinch of nutmeg
- 1 tbsp vanilla maple syrup
- 2 tsp double cream
- 2 tablespoons slivered almonds
- drizzle of vanilla infused maple syrup
Apple blueberry mixture:
- In a saute pan melt butter.
- Toss in apples and blend with butter.
- Throw in raisins and stir.
- Sprinkle in brown sugar, cinnamon, and nutmeg.
- Pour in maple syrup.
- Lastly place in blueberries.
- Cook till apples are the desired texture about 10 minutes.
- While apples are cooking, put the rolled and steel cut oats in a saucepan.
- Add the milk and water.
- Add a pinch of salt, dash of cinnamon, and a sprinkle of brown sugar.
- Slowly bring to a boil over medium heat, lower heat and simmer stirring constantly.
- Cook for about 15 minute or until desired consistency is achieved.
- Spoon oats into a bowl.
- Top with apple blueberry mixture.
- Sprinkle with slivered almonds and a nice drizzle of the maple syrup.
- Top with spoonful of double cream.
- Ready to serve.
You can use any sugar you like, but I find brown works the best.
If you don’t have the vanilla maple syrup, use what you have, and that also goes for the fruit.
