As a matter of fact, these simply delicious cakes are my absolute favorites. They use common ingredients, are easy and fast to make, and do not need any embellishment to cover their unsophisticated beauty. Moreover, they eat beautifully and are great at breakfast, snack, tea time, and dessert. If you like apple cakes, try my mom's Torta di mele with olive oil. The ingredients
- amaretti cookies - crumbled not too fine, will give flavor and texture
- cane sugar - or granulated sugar. I always use organic cane sugar
- baking powder - or 1 package of the Italian lievito vanigliato (baking powder flavored with vanillin)
- farina 00 - or all-purpose flour
- eggs - only organic free-range for us
- vegetable oil - any kind, I use peanut oil
- apples - Pink lady, or Gala, or any kind you like
- lemon - the juice for the cut apples so they do not brown
Let's make Apple and Amaretti cake
- Crumble the amaretti cookies and place into a bowl. Add the sugar, flour, and baking powder. Mix to combine.
- In a small bowl, whisk the eggs and the oil.
- Take two of the apples, cut them in half, then into quarters, and peel. Cut the quarters in half and cube them. Place the cubed apples in a bowl, squeeze lemon juice over top, and stir.
- Take the other apple, cut it in half, then into quarters, peel, and slice. Place the slices into a small bowl, and squeeze some lemon juice on top.
- Add the egg mixture to the flour mixture and mix with a spatula or a fork. Before it is fully combined, add the cubed apples and mix to combine.
- Place the thick batter into a greased and floured 20-22 cm round baking pan and level the top. Kitchen tip: If using a silicone pan like mine, you do not need to grease it.
- Arrange the sliced apples on top of the batter.
- Bake in the preheated oven for about 30-35 minutes or until a cake tester inserted in the middle comes out clean.
- Remove from the oven, let cool on a baking rack, then unmold.
My silicone mold has a pretty flower design at the bottom that I tried to recreate on top with the apples. Cheerful and sunny. Not surprisingly, I feel like Spring is coming in this part of the world.

- 50 g cane sugar + more for the top
- 16 g baking powder or 1 package lievito vanigliato
- 150 g farina 00 or all-purpose flour

Notes
To crumble the amaretti you can use a food processor, but leave a little texture, a rolling pin to crush them inside a bag, or the bottom of a glass inside a large bowl.
