Amazing Cranberry Orange Scones
Recently, we've made these scones for a virtual cooking class. It was a sold-out class, which means that I'm not the only one who loves a good scone. These particular ones have a lovely flavor due to the combination of cranberries, orange, vanilla, and white chocolate. They were a success, hence, a post to record an awesome recipe.
The preparation of Amazing Cranberry Orange Scones
- In a large mixing bowl, whisk together flour, baking powder, sugar, and salt. Toss in cubed butter, and work it with a pastry blender. Then, add the grated zest and stir.
- Whisk the egg and cream together with the vanilla in a small bowl, then add to the flour mixture, gently mixing with a fork.
- Before it is fully blended, add the cranberries and the white chocolate chips and blend to combine.
- Pour the dough onto a surface and gently shape it into a ball. Don’t overmix.
- Next, pat it down, then with a sharp knife cut into 6 wedges.
- Brush with egg wash or cream and sprinkle with cane sugar.
- Lastly, bake in the preheated oven, until firm and golden, about 25-30 minutes.
- Transfer to a cooling rack.
Some helpful scone tips:
- mix the dry ingredients together: flour, baking powder, sugar and a pinch of salt
- use very cold butter, cubed or shaved, and work it into the flour with a pastry blender (or your fingertips) until it resembles a fine crumb
- lightly beat the egg and the cream before adding to the dry ingredients, so you don't have to mix too much
- do not overwork the dough
- arrange your scone wedges close to one another, not touching, on a parchment-lined baking sheet before baking (this will ensure they rise upwards, not outwards).

Here, you could omit the white chocolate in the batter, we've made them often without, or, you could add an orange glaze. Also, you could melt the white chocolate and drizzle it on top of the scones when they are fully cooled. Either case, you are going to love their tender, moist but not cakey texture.
Can I freeze scones?
As a matter of fact, we always freeze some, since there is only two of us. We individually wrap in plastic the scones we want to freeze. We place them in a ziplock bag and into the freezer. When we want to use them, we defrost overnight and warm in the toaster oven in the morning. Just as good as freshly baked.

Ingredients
- 1 ½ cups flour
- ¼ cup sugar
- 1 ½ tsp baking powder
- ¼ tsp salt
- 6 Tbsp (85 g) cold, unsalted butter
- the grated zest of 1 orange
- 1 cup frozen cranberries
- ½ cup heavy cream
- ¼ tsp vanilla extract
- 1 egg
- ¼ cup white chocolate chips (optional)
- 1 egg + 1 tsp cream, beaten, to brush the top
- cane sugar to sprinkle on top
Instructions
- Pre-heat the oven to 375° F and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together flour, baking powder, sugar, and salt.
- Toss in cubed butter, and work it with a pastry blender. Then, add the grated zest and stir.
- Whisk the egg and cream together with the vanilla in a small bowl, then add to the flour mixture, gently mixing with a fork.

- Transfer the wedges to the prepared baking sheet, closer together, but not touching (about 2 inches apart).
- Brush with egg wash or cream and sprinkle with cane sugar.
- Bake in the preheated oven, until firm and golden, about 25-30 minutes.
- Transfer to a cooling rack.

Notes
At the end, instead of brushing the top of the scones with an egg wash, you can simply brush them with cream, and then sprinkle with sugar.
Instead of cutting them into wedges, you can use a round cutter, reworking the scraps of dough to make more.

You are right, many of us enjoy a good scone - and the flavors in this one are just outstanding! I hadn't known about brushing the tops of the scones with cream, then sugar, instead of the egg wash, and can't wait to try that.
